Healthy Almond Butter Oatmeal Cookies

The cookie recipe I can't stop making! They're made with simple clean ingredients that leave you with a delicious gooey cookie. The beauty of this recipe is that you can make them your own by adding whatever mix-ins you'd like.


Makes: 8-10 cookies

Ingredients

3/4 cup creamy almond butter

2 eggs

1/4 cup coconut oil, at room temp (not melted)

2 tsp vanilla extract

1/2 cup light brown sugar

1/2 cup almond flour

1 tsp baking soda

1/2 tsp cinnamon

1/2 tsp salt

3/4 cup rolled oats

Mix-Ins:

1/2 cup chocolate chips

1/3 cup chopped walnuts


  1. Preheat oven to 375°F. Line a large baking sheet with parchment paper.

  2. In a large mixing bowl, beat together the almond butter, eggs, coconut oil, and vanilla until smooth. Add the brown sugar and mix until well-incorporated.

  3. Stir in the almond flour, baking soda, cinnamon, and salt until just combined.

  4. Fold in the oats, followed by the chocolate chips and walnuts (or whatever mix-ins you want).

  5. Place the bowl in the fridge for at least 15 minutes, or up to overnight.

  6. When ready to bake, use an ice cream scoop (or regular spoon) making each scoop about 2-3 tbsp. Roll each ball in your hands to smooth it out then gently flatten it before placing onto the cookie sheet. Space out the cookies as they will spread quite a bit while cooking.

  7. Bake the cookies on the middle rack of your oven for 8-9 minutes, until the edges are slightly golden brown and the top is just barely set - they will still look a little gooey & raw.

  8. Allow the cookies to cool on the pan for at least 10 minutes so they can finish cooking. Then transfer to a rack to cool completely before storing in an air tight container.
