Dill Pickle Chicken Salad

This dill pickle chicken salad is both husband approved & super easy. I like to make my own shredded chicken but if you’re pinched for time you can of course buy a rotisserie chicken instead. Between the chicken & greek yogurt, it’s packed with protein. The pickles make it salty, the relish makes it sweet, and the herbs make it super fresh. You can find me eating this chicken salad all summer long.
Makes: 4-5 servings
Ingredients
1+ lb thick chicken breasts, cooked & shredded (~3 cups shredded chicken)
¼ cup Greek yogurt
¼ cup mayo
1 tsp dijon mustard
2 tbsp sweet relish
1 cup dill pickles, finely chopped
¼ red onion, finely chopped
2 tbsp fresh dill, chopped, + more for garnish
2 tbsp fresh parsley, chopped
1 tsp salt
½ tsp pepper
Mixed greens
Cucumber, chopped
Red onion, chopped
Crackers of choice
Instructions
Add shredded chicken to a large bowl.
Add the Greek yogurt, mayo, dijon, and relish. Stir until well combined.
Add chopped dill pickles, dill, parsley, red onion, salt & pepper. Mix until well combined.
Serve over a bed of lettuce, cucumbers, & red onion with crackers on the side.
